Kimbap Recipe


Preparation:

  1. When rice is almost cooled, mix with sesame oil and salt.
  2. Stir fry carrots briefly with a dash of salt.
  3. Stir fry cucumber with a dash of salt.
  4. Whisk eggs until evenly yellow and fry into flat omelet.
  5. Cut cooked egg into long strips.
  6. Cook bulgogi according to recipe directions.
  7. Using a bamboo sushi roller or a piece of tin foil, lay the dried seaweed shiny side down.
  8. Spread about ½ cup of rice onto 2/3 of the seaweed, leaving the top 1/3 bare (if you moisten your fingers or a spoon to pat down the rice, you'll get less of a sticky mess).
  9. Lay the first ingredient down around 1/3 of the way up from the bottom of the seaweed.
  10. Lay the other fillings down on top.
  11. Roll from the bottom (as if you're rolling a sleeping bag), pressing down to make the fillings stay in.
  12. As you continue to roll, pull the whole thing down towards the end of the bamboo mat.
  13. Spread a tiny dab of water along the top seam to hold the roll together.
  14. Set aside and continue with other seaweed sheets.
  15. Cut each roll into 7-8 pieces.

Lobster Thermidor



Cut the lobster in half lengthwise, and remove the meat from the claws and tail. Leave to one side. Remove any meat from the head and set aside. Cut the meat up into pieces and place back into the shell.
Melt the butter in a large skillet over medium heat. Add the shallot; cook and stir until tender. Mix in the fish stock, white wine and double cream. Bring to a boil, and cook until reduced by half. Mix in the mustard, lemon juice, parsley, salt and pepper.
Preheat your oven's broiler.
Place the lobster halves on a broiling pan or baking sheet, and spoon the sauce over the lobster meat in the shell. Sprinkle Parmesan cheese over the top.
Broil for 3 to 4 minutes, just until golden brown. Serve immediately.

Thai Lemon Shrimp



Directions

Marinate the shrimp in the sweet chili sauce, lemon juice, lemon zest, kaffir lime leaves, chili sauce, fish sauce, garlic and sugar for 10 or more minutes.

Heat a pan over medium heat.

Add the shrimp along with the marinade and the coconut milk and simmer until the shrimp are cooked, about 2-3 minutes.

Remove from heat and mix in the cilantro.

Shrimp Scampi




    Start cooking the pasta as directed on package.
    Heat the oil and melt the butter in a pan over medium heat.
    Add the red chili pepper flakes and garlic and saute until fragrant, about 1 minute.
    Add the shrimp and saute until cooked, about 1-3 minutes per side.
    Remove the shrimp from the pan.
    Add the wine and lemon juice and bring to a boil.
    Simmer the liquid until reduced by about half, about 3-5 minutes.
    Add the butter, wait for it to melt and turn off the heat.
    Add the shrimp, pasta and parsley and toss to coat.

Chili Crab



Directions

Clean the crabs and chop the crabs into pieces at the joints.
Use a food processor or mortar and pestle to grind and mix up the chilies, soy bean paste, garlic and fresh ginger. Make sure your new spice paste is finely ground.
Heat up your wok and the cooking oil. Fry the spice paste until it emits a spicy fragrance.
Add in the crab pieces, about 1/2 cup of water and stir the mixture. Cover the wok for 3 to 4 minutes.
Add in the sugar, tamarind juice, salt and stir for roughly 2 minutes until the crab pieces are red and delicious looking.
Serve each crab on a plate (or paper plate if you're doing the street foodthing), spoon on the chili sauce, garnish with the scallions, and delightfully consume.

Shad Roe with Bacon



First of all do you know what is shad roe??? Shad are one of fish where the eggs are valued more that the fish itself. Shad roe is vaguely fishy but not overpoweringly and the texture is similar to a good meatball(soft yet meaty). The classic way ti cook this delicacy is cooked in bacon fat and it will served with lemon and a fresh spring herbs.



Ingredients:


4-6 lobes of shad roe
2 cups cold water
1 tablespoon salt
6-10 pieces of smoky , thick-cut bacon
1 lemon quartered
fresh herbs such as chevil , fennel or parsley to garnish









Directions:

Combine the salt and 2 cups cold water, mix until it's dissolved. Submerge the roes in the salt water and let soak in the fridge overnight.

Slowly cook the bacon until crispy then set aside to drain.
Meanwhile flour the roes and set aside until the bacon is done.
When the bacon is finished turn the heat to medium high and cook the shad roe for 1 minute.
Turn the heat down to medium then cook for another 2-3 minutes until golden brown. Do it again in the other side.
To serve, arrange bacon on a plate place the fesh herbs on the bacon and the roes on the top . Serve with a lemon wedge.
